Vegan & Gluten Free Recipes Take 2

1 day of Vegan / Gluten free friendly recipes: Breakfast,lunch & dinner and you can't forget that glass of wine!

Ive made it about a week without any animal products, except I did cheat, once, hey, Im only human.....:-)

  Today Ill share with you a day's worth of meals that I had made this week that were so good, I cant keep it to myself.  I do hope you enjoy!

If any of you are NOT vegan or gluten free, boy do I have some amazing recipes to share.............

TOFU AND “FAKE” SAUSAGE SCRAMBLE

 

½ Firm Tofu – I use Nasoya, using Non GMO Soybeans- $2.49 S&S

¼ package of “fake” sausage- I use Gimme Lean, can be found in the vegan refrigerated section in produce at S&S $4.49

¼ C diced onions

¼ C diced green peppers

1 TBSP Nutritional Yeast – I use Red Star $4.99, comes in 5 oz so will last you quite a while

¼ Teaspoon turmeric

¼ Teaspoon onion powder

S&P to taste

 

DIRECTIONS

Brown the onions, peppers and sausage with some olive oil in pan on med heat, you will have to break up the sausage. Once browned, crumble tofu in pan and add remaining ingredients. Saute for about 10 min. Yum!

 

LUNCH

Brown Rice and Chickpea Salad – Thank you www.ohsheglows.com

 

INGREDIENTS:

½ C cooked brown rice

1 C cooked chickpeas

1/2-3/4 C finely chopped cucumber

1/3/C finely chopped parsley

1 green onion, chopped

 

DRESSING

1 tablespoon balsamic ving

1 Teaspoon olive oil

1 Teaspoon H2O

1 Teaspoon maple syrup

S & P to taste

 

DIRECTIONS

In a bowl, mix together the salad ingredients. In a smaller bowl whisk together dressing ingredients. Pour onto salad and enjoy!

 

DINNER

Crock Pot Time! Vegan Irish Stew

 

INGREDIENTS:

1 whole sweet onion, diced

3 carrots, chopped

1 cup mushrooms sliced

2 garlic gloved, minced

½ bag fresh spinach, rinsed

1 can cannellini beans, drained and rinsed.

3 C veggie stock

2 C H2O

¼ C white wine – I use Sterling Vineyards pinto Gris- Yes its vegan! $10.99 Bahres Package Store, Canton

2 Tablespoons Tamari, or soy sauce whichever you have on hand.

½ teaspoon thyme

S&P to taste

1 Bay leaf

DIRECTIONS:

Saute onions in pan with some olive oil. Add to crockpot along with all the ingredients. Mix well and place on low for 8 hours. Walk away and enjoy your day. 1 Hour before its done add ½ bag rinsed fresh spinach.
